This 'Snickers' Cacao-Date Bark is the answer for those post-dinner cravings. It's simple to make, uses only 6 ingredients (or 4 if you prefer it less fussy), and has the best combo of textures - chewy, crunchy and smooth. Plus, it's freezer-friendly, so you can whip up a batch and enjoy it throughout the week!

Here are three textures you'll experience in this "Snickers" Cacao-Date Bark:

1. Chewy: This comes from the medjool dates. They have a naturally soft and chewy texture that provides the base of the bark and mimics the nougat in a Snickers bar.

2. Crunchy: The cold-hardened cacao adds a layer of satisfying crunch, mimicking the chocolate shell. The roasted peanuts create a lovely crunch that contrasts perfectly with the chewiness of the dates.

3. Smooth: The runny peanut butter layer is a smooth and creamy element (not too dissimilar to ice-cream) to the overall texture. It complements the chew and crunch and adds a richness that ties everything together.

Here's what you'll need:

  • 120g nibbed pure cacao (grated or chopped block)
  • 1 tbsp sweetener of your choice (we love coconut sugar or maple syrup - adjust for sweetness)
  • 15 medjool dates (medjool are essential for the perfect texture)
  • Runny, smooth peanut butter
  • Roasted peanuts (optional, for extra crunch)
  • Sea salt (optional, for a sweet and salty contrast)

How to make:

1. Melt the Cacao Gently:

Put the cacao into a heat-resistant bowl, place that over a saucepan with a little  simmering water (make sure the bowl doesn't touch the water) and let it steam it to melt. 

2. Squish the Date Base:

While the cacao melts, take your medjool dates and press them flat on a baking sheet or plate.

3. Assemble the Layers:

Once the cacao is melted, turn off the heat and let it sit for a few minutes. Spread a generous layer of peanut butter over the flattened dates using the back of a spoon.

4. Sweeten it Up:

Add your chosen sweetener to the cacao. Avoid over-stirring to prevent the cacao from seizing.

5. Cacao-y Bliss:

Pour the melted cacao mixture over the peanut butter layer, spreading it to the edges.

6. Crunchy Perfection (Optional):
Sprinkle your roasted peanuts on top of the cacao layer for a nice crunch.

7. Sweet and Salty Symphony (Optional):

Sprinkle a touch of sea salt over the top. The sweet and salty combination is so good!

Freeze and Enjoy!

Pop it all into the freezer for around 45 minutes, allowing it to harden completely. Once set, chop it up into bite-sized pieces and store in a lunchbox in the freezer for easy grabbing throughout the week.
